Cheese and cherry tomato soufflé tart with seed crust
Ingredients: For the crust:
  • 1 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 teaspoon fine salt
  • 2 teaspoons seed mix
For the filling:
  • 4 eggs
  • 150g shredded cheese
  • 3 tablespoons cream cheese
  • Salt and pepper to taste
  • 100g cherry tomatoes
To make the crust, mix together the flour, salt, and seed mix in a bowl. Make a well in the center and add the olive oil and water. Mix and knead until you get a smooth ball of dough. Cover and let rest for 15 minutes.
For the filling, beat the eggs until frothy in a bowl. Add the shredded cheese, cream cheese, salt, and pepper. Mix well.
Roll out the dough with a rolling pin and place it in a baking dish. Pour the filling over the crust and top with halved cherry tomatoes.
Cover the dish and cook over medium heat for about 40 minutes.
Uncover, cut into squares, and serve with a salad if desired.
