Cinnamon and coffee cake
  • 6 Eggs
  • 400 grams Sugar
  • 250 cc Instant Coffee (strong)
  • 60 cc Olive Oil
  • 450 grams self rising Flour
  • 2 Teaspoons Ground Cinnamon
  • 1 Orange (zest and juice)

In a bowl, beat the eggs with the sugar. Add the coffee and oil and mix well. Add the sifted flour with cinnamon, alternating with orange juice and zest. Mix. Pour the mixture into a greased saucepan. Cover and cook over medium heat until a toothpick inserted in the center comes out dry. Run a spatula along the edges of the saucepan, turn out and let cool. We can serve it coated with chocolate frosting.
